Peptide bond and peptides. Proteins: properties and functions. Primary, secondary, tertiary and quaternary structure of proteins. Denaturation and renaturation of proteins. Relationships between three-dimensional structure and biological activity of proteins. Myoglobin and hemoglobin.
Enzymes: structure, function, classification and specificity. Enzyme kinetics.
