Course program
The aim of the course is to provide the basic concepts on energy metabolism, anabolism, catabolism, enzymes; the main metabolic pathways of amino acids, proteins, carbohydrates, fatty acids. understand the nutritional role and biochemical functions of amino acids and proteins, carbohydrates, lipids, nucleotides and nucleic acids. In addition, the nutritional role and biochemical functions of water-soluble and fat-soluble vitamins will be highlighted. At the end of the course, students will have acquired the tools to evaluate the nutritional impact of foods, as well as the impact on health and will allow them to apply their knowledge in the formulation of diets aimed at different contexts both at the individual level and at the population level. The following are the topics of the course: Biomolecules, structure and functions: amino acids and proteins; simple and complex carbohydrates; lipids. Hemoglobin and myoglobin. Enzymes, enzyme kinetics, regulatory enzymes. Allosterism. General scheme of metabolism: catabolic and anabolic pathways. Role of ATP. Cellular respiration and carbohydrate metabolism. Degradative metabolism of triglycerides and proteins. Ketone bodies Insulin and glucagon, an example of hormonal regulation.

Knowledge of the basic elements of general and inorganic chemistry and organic chemistry

Frequency
Compulsory attendance required by the course of study. The student must achieve 67% attendance in each module of the teaching in order to take the exam
Exam mode
The assessment of the achievement of the objectives set by the module includes a written test that will cover the entire course program with open questions. Through questions regarding the contents of the course, it will be ascertained whether the student has achieved the objective of knowledge and understanding of the contents.
Lesson mode
The lessons will take place in frontal mode, possibly at a distance in case of need for social distancing
